Easter is this Sunday coming and who doesn’t love Easter? A celebration of Spring, new life and of course delicious treats, Easter is awesome. It really is a time of refreshing, renewing and new life. Are you a huge Spring and Easter lover?
Easter is Awesome
With everything still at such a tense stage, it’s nice to have events and holidays to look forward to. Do you have plans for this Sunday? We usually spend it with friends and have a huge meal. The kids have an egg hunt and play games. Favourites include egg toss and the classic, egg and spoon races.
Although it’s sad we still can’t enjoy Easter with our extended family and friends. We can still fully make the most of it with lots of delicious cakes and treats.
Making the Most of Easter 2021
There are so many amazing ways to enjoy Easter and the top one being some great crafts. There is so many great and simple choices too. Whether you want to make baskets. Fun and colourful wreaths or even masks and ears. You can never have too many season crafts to enjoy. Even family Easter crafts can be really fun and add an Easter vibe to your home.
you could also decorate for the celebrations or just fully embrace spring into your home. Really make the most of the change in seasons from Winter to Spring.
Mini Egg Blondie Recipe
These soft gooey and frankly gorgeous mini egg Easter Blondie muffins are perfect as a special treat over the holiday period. Great to make with the kids and even as a special Easter pudding. The recipe makes 12 muffins.
You Will Need
90g Light brown sugar
135g caster sugar
1 tea spoon of vanilla essence
1 tea spoon of salt
1 tea spoon of bicarbonate of soda
100g of chocolate chips
240g mini eggs
12 muffin cases
- Pre-heat the oven to gas mark 180°c, 169°c fan assisted or gas mark 4.
- Add the butter and both sugars to your bowl and cream these together well.
- Next, add your two eggs and your vanilla essence. again stir really well.
- Now add the flour.
- The teaspoon of salt and bicarb next and mix really well again.
- The good bit next, crush up your mini eggs and add them to the mix.
- Add the chocolate chips.
- Now you can spoon the mix into cupcake cases. Fill them about 3/4 of the way.
- Put these in the oven for around 15 minutes until the edges are slightly golden. Then allow then to cool thoroughly.
These blondies are just stunning. Now you can have these plain and they’re gorgeous but you could also add some icing or buttercream/frosting on the top. We actually enjoyed ours with a splash of custard which was perfect.

As I said above, this Easter is less than we were hoping after being in lockdown so long. Not being able to spend Christmas or New Years with our nearest and dearest. It’s getting a lot! I hope you are able to make her most of your time. You could enjoy dinner over zoom or by phone which I known isn’t the same but at least these options are available.
